Winemaking
Completely estate-grown grapes from our family vineyards in La Seca. The grapes come from 15-year old Verdejo vines. Most of them are trellised and machine machine-harvested harvested at night during the second week of September. The soils in these vineyards are poor in nutrients, with a topsoil of rolling stones over a subsoil of clay. Grapes selected at their moment of ripening are mechanical harvested at night to preserve oxidation. Cold soaking of the skins before fermentation and temperature controlled fermentation at 17º C. Fermentation is stopped by lowering the temperature at the right moment to preserve the natural sugar of the grapes, obtaining a great balance between acidity and sweetness.
Tasting Notes
Pale yellow with greenish hints, bright and clear. Mellow but refreshing at the same time. In the nose, notes of melon and pineapple. With a pleasant mouthfeel, slight sweetness and grapey flavours combined with a light, balancing acidity.
Food Pairing
We recommend to serve it chilled (42ºF). It works superbly with soft cheeses and spicy finger food. It will balance and enhance the flavors of Asian food and spices.
