Sauvignon Blanc was first planted in Rueda more than 40 years ago and from the beginning it thrived in Rueda´s stony soils, giving place to fragrant and fresh wines, sometimes blended with Rueda´s own Verdejo and sometimes sometimes as a single varietal varietal. Vineyard. Fermentation takes place in stainless steel vats at a temperature below 15ºC, using the grapes´indigenous yeast. The low temperature allows for a slow fermentation that helps preserving as many fruity aromas as possible. The wine is aged on its fine lees before bottling. Cold stabilization and filtering before bottling.
Tasting Notes
Pale yellow with a tinge of green. It clearly shows delicate and characteristic varietal aromas like lime, grass and elderflower. There are also notes of tropical fruit like pineapple and passion fruit. In the palate, it displays a crisp acidity and a bright citrus fruit character, coupled with tropical flavors. Medium-bodied and refreshing, with lingering floral and mineral flavors in the finish.
Food Pairing
We recommend to serve it chilled (42ºF). It will suit any type of raw and lightly cooked shellfish like oysters and prawns, fresh crab and simply grilled fish. It also matches cold soups such as gazpacho or potato and goat cheese salads.
